- 1 medium Onion Chopped
- 1 large Red bell pepper Chopped
- 2 cloves Garlic Minced
- 1 tsp Ground cumin
- 1 tsp Paprika
- 1/4 tsp Cayenne pepper Optional, for heat
- 1 can Crushed tomatoes (14 oz)
- to taste Salt and pepper
- 4 large Eggs For poaching
- 4 pieces Pita bread For serving
- 1/4 cup Fresh parsley Chopped, for garnish
