Equipment

  • 1 Mixing Bowl For making the batter
  • 1 Whisk For mixing the batter
  • 1 Non-stick skillet For cooking the crepes
  • 1 Ladle For pouring the batter onto the skillet
  • 1 Spatula For flipping the crepes

Ingredients
  

  • 1 cup All-purpose flour
  • 1.5 cups Milk
  • 2 large Eggs
  • 2 tbsp Butter Melted
  • 1 tbsp Sugar Optional, for sweet crepes
  • 1/4 tsp Salt
  • 1 tsp Vanilla extract Optional, for sweet crepes

Instructions
 

  • In a mixing bowl, whisk together the flour, milk, eggs, melted butter, sugar, salt, and vanilla extract until smooth and free of lumps.
  • Let the batter rest for 10-20 minutes to allow the flour to hydrate.
  • Heat a non-stick skillet over medium heat and lightly grease it with butter or oil.
  • Pour about 1/4 cup of batter onto the skillet and quickly tilt and rotate the skillet to spread the batter into a thin, even layer.
  • Cook for about 1-2 minutes until the edges begin to lift and the underside is golden brown. Flip the crepe and cook for another 30 seconds to 1 minute.
  • Remove the crepe from the skillet and repeat with the remaining batter, greasing the skillet as needed.
  • Serve the crepes with your choice of fillings and toppings.

For a dairy-free version, substitute milk with almond milk and butter with coconut oil or margarine.
