  • 1 Biscuit cutter For shaping the biscuits

Ingredients
  

  • 2 cups All-purpose flour
  • 1 tbsp Baking powder
  • 1 tsp Salt
  • 1/2 cup Butter Cold, cubed
  • 3/4 cup Milk
  • 1/2 lb Sausage Ground, spicy or mild
  • 3 tbsp Butter
  • 1/4 cup Flour
  • 2 cups Milk
  • to taste Salt and pepper
  • 4 Eggs
  • As needed Butter or oil For frying

Instructions
 

  • Preheat oven to 425°F (220°C). Mix flour, baking powder, and salt. Cut in butter until mixture resembles coarse crumbs. Gradually add milk until dough comes together.
  • Roll out dough and cut with biscuit cutter. Place on baking sheet and bake for 12-15 minutes or until golden.
  • In a skillet, cook sausage over medium heat until browned. Remove sausage, leaving drippings.
  • Add butter and flour to drippings, whisking until smooth. Gradually whisk in milk. Bring to a boil, then simmer until thick.
  • Add the cooked sausage back to the skillet. Season with salt and pepper.
  • Heat butter or oil in a non-stick pan. Crack eggs into the pan, and fry to your preference.
  • Split biscuits in half. Spoon gravy over biscuits and top each with a fried egg.

Notes
