Equipment

  • 1 Non-stick pan For cooking the Bhurji

Ingredients
  

  • 6 Eggs Whisked
  • 2 tbsp Oil
  • 1 Onion Finely chopped
  • 2 Tomatoes Finely chopped
  • 2 Green chilies Finely chopped
  • 1 tsp Turmeric powder
  • 1 tsp Red chili powder Adjust as per heat preference
  • 1 tsp Cumin seeds
  • 1/2 tsp Garam masala
  • to taste Salt
  • 2 tbsp Coriander leaves Chopped, for garnishing

Instructions
 

  • Heat oil in a pan and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.
  • Add green chilies and tomatoes. Cook until the tomatoes turn soft and mushy.
  • Add turmeric powder, red chili powder, and salt. Mix well and cook for another 2 minutes.
  • Pour the whisked eggs into the pan and cook on medium heat. Keep stirring continuously to scramble the eggs.
  • Add garam masala towards the end and mix well.
  • Garnish with chopped coriander leaves and serve hot with bread or chapati.

Notes

For a vegan version, you can substitute eggs with scrambled tofu.
