  • 1 Large pot For cooking the soup

Ingredients
  

  • 2 tbsp Olive oil
  • 1 Onion Chopped
  • 2 cloves Garlic Minced
  • 2 cups Chicken broth
  • 1 can White beans Drained and rinsed
  • 4 Eggs
  • 1/2 tsp Thyme Dried
  • to taste Salt and pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until soft.
  • Pour in the chicken broth and bring to a simmer.
  • Add the white beans and thyme, and season with salt and pepper.
  • Carefully crack eggs into the simmering soup, spacing them apart. Cover and let cook for about 5 minutes until eggs are poached.
  • Adjust seasoning if needed and serve hot.

Notes

To make it vegetarian, use vegetable broth instead of chicken broth.
