Instructions
 

  • Prepare the Avocado Mash:
    Cut the ripe avocado in half, remove the pit, and scoop the flesh into a bowl.Mash the avocado using a fork until it reaches your desired consistency.Add lemon juice, salt, and pepper to taste. Mix well.
  • Cook the Egg:
    Heat a non-stick skillet over medium-low heat and lightly coat it with cooking spray or butter.Crack the egg into the skillet, and cook to your preferred level of doneness. You can make it sunny-side-up, over-easy, or scrambled.Season the egg with a pinch of salt and pepper while cooking.
  • Assemble the Sandwich:
