- 1 Mixing Bowl For preparing the sauce

- 200 g Soba noodles
- 2 Eggs Soft-boiled
- 1 cup Carrot Julienned
- 1 cup Cucumber Julienned
- 1 cup Red bell pepper Sliced
- 2 tbsp Sesame seeds Toasted
- to taste Salt
- 1/4 cup Soy sauce Low sodium
- 2 tbsp Rice vinegar
- 1 tbsp Sesame oil
- 1 tbsp Honey Or maple syrup for a vegan option
- 1 tsp Fresh ginger Grated
- 1 clove Garlic Minced
