- 1 9-inch Pie Dish
- 1 Skillet For cooking bacon and spinach
Ingredients
- 1 piece Pre-made pie crust Or your favorite homemade crust
- 6 slices Bacon Chopped
- 2 cups Fresh spinach Washed and chopped
- 4 Eggs Beaten
- 1 cup Milk Whole or 2%
- 1/2 cup Heavy cream
- 1 cup Shredded cheese Swiss or Cheddar
- to taste Salt and black pepper
- 1/4 tsp Nutmeg Ground, optional
Instructions
- Preheat oven to 375°F (190°C). Line a 9-inch pie dish with the pie crust. Crimp the edges as desired.
- Prick the bottom of the crust with a fork. Place parchment paper over the crust and fill with pie weights or dried beans.
- Bake for 10 minutes, then remove weights and parchment and bake for an additional 5 minutes. Set aside to cool.
- In a skillet over medium heat, cook chopped bacon until crispy. Remove bacon and set aside. Drain excess grease, leaving about a tablespoon in the pan.
- Saute spinach in the same skillet until wilted. Spread the spinach and bacon evenly over the bottom of the pre-baked crust.
- In a medium bowl, whisk together eggs, milk, cream, salt, pepper, and nutmeg. Stir in the shredded cheese.
- Pour the egg mixture over the spinach and bacon in the crust.
