- 2 medium Sweet potatoes Peeled and diced
- 1 large Onion Chopped
- 1 bell pepper Bell pepper Diced
- 2 cloves Garlic Minced
- 1/2 teaspoon Paprika
- to taste Salt and pepper
- 2 tbsp Olive oil For cooking
- 4 Eggs
- as needed Salt and pepper For seasoning
